ABOUT THE CHEF
Chef Walker’s cooking style is heavily influenced by his various travels. Though he is a Boston chef through and through, he also learned different techniques from his visits to Singapore, Thailand as well as parts of Europe and the western coast of the United States. All of these different influences come together to create menu choices that are absolutely spectacular!

Chef Walker places a great deal on emphasis upon each ingredient he uses in his dishes. There is no tolerance for anything that is less than its absolute freshest, and he ensures that each thing on his menu, from vegetables to protein is locally sourced in New England.

Educated at Johnson and Wales University, Chef Walker began his culinary journey as a line cook and quickly progressed to sous chef status. It was during this period in time that he began to develop an acute interest in butchering. “The thing I love most about butchery is that you are continuously learning,” he says. “It’s a craft that never ends. There’s always some little intricate thing you didn’t know.”

Chef Walker seeks to share his passion with others by offering instruction in a butchering class via Self-Up. By imparting his knowledge, he brings people of all ages and backgrounds together for a common goal: creating some absolutely delicious food!

While most butchering classes will only teach you how to obtain certain cuts of meat, in Chef Walker’s class, absolutely nothing goes to waste. You work with every part of the animal, from head to tail, learning the best preparation methods for each and every cut of meat you obtain.

The whole butchery not only promotes a greater respect for the animal you are utilizing, it encourages creativity, as you will be working with cuts of meat that may not be familiar to you! In this class, Chef Walker brings people together for incredible moments of education mixed with information and of course, fun.
